I am trying to get out of the funk I have been in and start my week off on a positive note and do away with Negative Nelly for good.
After two days of eye drops, I can already see a vast improvement in our eyes. Shelby's eyes are only slightly goopy when she wakes up, and not at all goopy during the day. My eyes are not near as red as yesterday, and I didn't have the constant burning and itching that I had yesterday. Woohoo!
I enjoy cooking, and it usually puts me in a good mood, so after a much needed afternoon nap, I rolled out of bed to figure out what to make for dinner. The times when I enjoy cooking the most are when I play "pantry surprise". This is when you have no set meal planned and have to try to come up with something with what you've got. Since I had not planned ahead and thawed out any chicken or ground beef, I decided it was going to be a vegetarian meal: salad and roasted vegetable soup. I usually take the Rachael Ray approach and don't measure anything, so I can't really tell you exactly how I made the soup, but here is what I did:
-Gathered any vegetables I had in the fridge that needed to be used- celery, broccoli, cauliflower, carrots- plus an onion and garlic from the pantry.
-Rough chop everything, then put in a roasting pan. Drizzle with olive oil and sprinkle with salt and pepper. Cook at 450 for about 30-40 minutes.
-This might seem weird. I had a box of au gratin potatoes in the pantry. So while the veggies were roasting, I took the dehydrated potatoes and boiled them til tender.
-When all the veggies were cooked, I put them in the blender and pureed them. I put everything in a soup pot and added probably 1 cup of milk and 4 cups of chicken broth.
-Then I added the seasoning packet from the au gratin potatoes, and two big handfuls of cheese.
I was pretty pleased with the result of the soup. Jeremy said he would take some for lunch tomorrow, so it must have been ok. That or he didn't want Negative Nelly to resurface. :)
For dessert I made Rocky Road cake. I am not usually a Rocky Road fan, but we had chocolate icing, so I was just trying to do what I could with it. It actually came out pretty tasty.
To top it all off, I was just pretty entertained by the Russian ice dancing team. This week is bound to be good.

THOSE are my worst cooking nights for sure. If I dont plan a week of meals on MOnday... we eat whatever is around that week. macncheese, chikfila, eggo waffles... or I just eat chocolate and let brian fend for himself. So Kudos to you!
